Perfect Protein Salad

1 Cup garbanzo beans, rinsed and drained

1 Cup diced English cucumber

½ Cup raw carrots, chopped

½ cup red and/ or green bell red pepper

2 green onions, chopped

¼ cup sunflower seeds

¼ red onion, diced

1/8 cup fresh parsley

Dressing

1 cup low fat cottage cheese

2 T apple cider vinegar

1tsp crushed garlic

1 tsp sea salt

1 tsp black pepper

 

In a small bowl, mix together all the dressing ingredients and set aside. Combine the salad ingredients and then pour the dressing over and toss. You can make coleslaw out of this by shredding the carrot, cucumber, bell peppers, onions and parsley in a food processor.
